Mars, also known as Maria, lives full-time in Betty, a 2021 Mercedes-Benz Sprinter 170-inch 4×4 she built herself after leaving Crete. She wanted the interior to recall the stone-and-plaster houses of her home island, so she coated the walls and ceiling in Roman clay. The finish stays slightly uneven and tactile on purpose. Black laminate cabinets, wood-look vinyl plank floors, and a painted faux-stone backsplash complete the look. She mixed drywall putty into the plastic panels’ joints so the “stone” would feel built rather than stuck on.



Betty rides in the back of an Owl Vans vehicle, which has robust all-terrain tires. At the back, she has a spare-tire carrier that also serves as a ladder to the roof rack, which houses 400 watts of solar panels waiting to absorb sunlight. Magnets above the sliding door allowed her to quickly hang a full blackout curtain to keep the room dark. The entire cabin is open from the front of the van all the way to the back—from the driver’s seat right through to the back—and the passenger seat swivels around to face the rest of the living space.

A kitchenette has been built on both sides of the aisle. One side features a large stainless steel sink, a two-burner propane stove, and an espresso machine, all securely fastened with earthquake putty. The other side is an Isotherm fridge with a separate compartment for freezing items, large enough to fit an entire pizza box. The top is a stunning piece of black walnut that she spent days polishing to a flawless shine. It’s extensible with a handy flip-up leaf and can be spread out wide as needed. There’s also plenty of storage, with a pull-out pantry, spice rack, toe-kick drawer, and a 1.5-gallon water heater nestled under the sink.

Over in the seating and work zone, two benches and a Lagun table combine to form a cozy little spot to sit and work. That’s where she puts up extra monitors for design, photography, and traditional hand-drawn artwork. The extended seat on the driver’s side houses a secret chamber containing a CompoCloset Cuddy composting toilet. The opposing bench has its own secret hiding place as well, with a 28-gallon water tank stored underneath. If you remove the floor between the benches, you’ll uncover a 32-by-32-inch shower with its own small gray tank for water. Most days, however, she still uses the gym showers.

Out back, there is a platform that begins life as a couch with backrest. But with a little effort, the backrest turns over to make a comfortable queen-sized bed. For good measure, there are four overhead storage boxes, a bookcase or two, an Arctic Tern skylight with built-in shades and screens to keep things dark, two Maxxair dome fans to keep things cool, reading lights, and a Sirocco fan to keep everything cool. A garage under the bed and chassis houses tools, spare tanks, a mini-split, and the gray water tank, which can be drained with the push of a button.

The camper is powered by two 270 amp-hour BattleBorn batteries, giving her a total of 540 amp-hours of lithium storage and a 3,000 watt inverter. It receives power from solar panels, shore power, and the alternator on the van. She wired it entirely herself, and that first project transformed her into a proper off-grid electrician who has since completed over ten van builds. Regardless of the season, a diesel heater and a mini-split keep the clay-walled interior warm and comfortable. Betty has been her home for years, and the layout continues to work well whether she is cooking up a storm, working remotely, or parked miles from anything.
